Holistic Gluten-Free Chocolate Cake (Vegan + Refined Sugar-Free)

Ingredients

  • 1 ¾ cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour

  • ¾ cup unsweetened cocoa powder

  • 1 cup coconut sugar (or maple sugar)

  • 1 tsp baking soda

  • 1 ½ tsp baking powder

  • ½ tsp salt

  • 1 cup unsweetened plant milk (almond, oat, or coconut)

  • 1 tbsp apple cider vinegar or lemon juice

  • ½ cup melted coconut oil (or avocado oil)

  • 2 tsp vanilla extract

  • 1 cup hot coffee (or hot water)


 Instructions

  1. Preheat oven to 350°F (175°C).

    Grease and line a 9x13 pan or two 9-inch round pans.

  2. Prepare vegan “buttermilk”

    Mix plant milk + apple cider vinegar.

    Let sit for 5 minutes.

  3. Mix dry ingredients

    In a large bowl, whisk together flour, cocoa powder, coconut sugar, baking soda, baking powder, and salt.

  4. Add wet ingredients

    Add the milk mixture, oil, and vanilla.

    Mix until smooth.

  5. Add hot liquid

    Stir in hot coffee (or water). The batter will be thin—this is perfect for a moist cake.

  6. Bake

    Pour into pan(s) and bake:

    • 30–35 minutes (round pans)

    • 35–40 minutes (9x13)

      until a toothpick comes out clean.

  7. Cool completely before frosting.
