Healthy Chicken Broth

Ingredients:
1 whole chicken or 1–1.5 kg chicken thighs with bones
1 onion, halved (skin on is fine)
2 carrots, roughly chopped
2 celery stalks, roughly chopped
2–3 garlic cloves (optional)
1–2 bay leaves
1 tsp whole peppercorns
1–2 tbsp apple cider vinegar
Water to cover
Salt to taste (add at the end)
Preparation:
Place the chicken or bones in a large pot and add the vegetables, garlic, bay leaves, and peppercorns. Cover everything completely with cold water. Add the apple cider vinegar and let it sit for 15–20 minutes before heating — this helps draw minerals from the bones.
Bring the pot slowly to a gentle boil, then reduce to a low simmer. Skim off any foam that rises to the surface during the first 30 minutes.
Simmer:
Whole chicken: 1.5–2 hours
Bones only: 3–6 hours (the longer it cooks, the richer it becomes)
Strain the broth through a fine sieve, add salt to taste, and let it cool. Store in the refrigerator for up to 5 days or freeze for later use.
Tip: If the broth turns slightly jelly-like in the fridge, that’s a good sign — it’s rich in natural collagen.
