Mint Pesto Recipe

🌿 Mint Pesto Recipe


Ingredients:

• 2 cups fresh mint leaves (packed, stems removed)

• ½ cup fresh parsley or basil (optional for a milder mint flavor)

• ½ cup nuts (pine nuts, almonds, walnuts, or cashews work well)

• ½ cup freshly grated Parmesan cheese (optional for vegan: use nutritional yeast)

• 2–3 cloves garlic

• ½ cup olive oil (extra virgin)

• Juice of ½ lemon (optional, brightens the flavor)

• Salt and pepper to taste

Instructions:

1. Toast the nuts (optional):

◦ In a dry skillet over medium heat, toast the nuts for 2–3 minutes until fragrant. Let

them cool.

2. Blend ingredients:

◦ In a food processor, combine mint, parsley/basil (if using), toasted nuts,

Parmesan, and garlic. Pulse until roughly chopped.

3. Add oil:

◦ With the processor running, slowly drizzle in olive oil until you get a smooth,

spreadable paste.

4. Season:

◦ Add lemon juice, salt, and pepper to taste. Blend again briefly.

5. Adjust consistency:

◦ If too thick, add a little more olive oil or a splash of water.


🥗 Serving ideas:

• Toss with pasta or roasted vegetables.

• Spread on bread or sandwiches.

• Mix into yogurt or hummus for a dip.

• Use as a marinade for fish, chicken, or tofu.
